I was privileged to be assigned as a chaplain to an Assisted Living facility recently. I loved the atmosphere and the freedom of the individuals who had wisely chosen to live there. I would like to tell you about my experience as a staff member at this facility.
When I walked into the lobby, it was like entering a posh hotel. There were lovely paintings and furnishings, throw rugs and fresh flowers were scattered about the room. There were residents seated in the lobby, which was arranged like a club room at this time. The residents were very actively playing games, bridge, canasta, rummy, chess and backgammon. Ah what a wonderful world we live in a world where giant agricultural producers regularly feed arsenic to chickens. This, mind you, isnt how they kill the chicken. No, its how they make them grow bigger, faster, cheaper. Administered in small amounts, arsenic is one of many compounds found in various drugs routinely administered to chickens in their feed. These same giant agricultural producers have maintained for years that the arsenic never makes its way into the actual chicken meat sold at the supermarket. It all gets pooped out! Or so they say. Yet if thats the case, then why did the FDA recently admit that arsenic does, in fact, show up in supermarket chickens?
I have 2 quarts of Mott’s Garden Blend Vegetable juice. It has tomato, celery, carrot, and parsley juice. I had no luck getting my kids to try to drink the juice, so instead I found a recipe to use it in. We tried some homemade burgers and homemade fries for dinner last night, using this recipe. The recipe has you soak three slices of bread in tomato juice, then add it to the hamburger patty mixture. The only change I made was to use whole wheat bread to soak with juice, instead of white. Plus I added about 1 cup of oats, because it seemed to hold the patties together a little better.

Imagine the sensation of cross-country skiing — sliding forward with your feet, powering through with your arms — without even a sprinkling of snow around. Or perhaps turning on a longboard — by swinging out your body — but minus the tricky learning curve.
My first attempts on the new, California-built, StreetStrider that’s now landed in B.C. are strange yet familiar.
Starting by clenching the two hand brakes firmly, I step on two long thin planks and within seconds, I’m standing tall, balancing a little (I’m assured it’s extremely difficult to tilt over the StreetStrider) while pushing and pulling the handles, flowing my feet forward and back, and raising my heartbeat as I begin to confidently navigate the path — by slightly bending into the turns — on the machine.

The first time my imagination ever wandered to Joel Salatins Polyface Farm, I immediately fell in love with the lush grasses, the intricate relationships between the cows, the chickens, the pigs, the rabbits, the wildlife, and the various miniature ecosystems Joel cultivated. Here was true sustainable agriculture something more efficient and ecologically sound than randomly grazing wild ruminants. Polyface was a far cry from a return to the glorified past.
